So today is “National Chocolate and Almonds” day!
While I didn’t have any almonds, I was able to finally test run a chocolate recipe I’ve been thinking about since I borrowed Isa Chandra Moskowitz’s book “Vegan Brunch” from the library. Are you ready? Chocolate Beer Waffles.

My better half, Geoph, usually buys local beers, and he bought Captain Bastard’s Oatmeal Stout (a Utah Squatter’s beer) last night. With a few revisions, I present to you…
Captain Bastard’s Chocolate Waffles!
[with chocolate sauce and whipped cream]
1 1/2 cups flour
1/3 cup cocoa powder
2 tsp. baking powder
1/2 tsp. salt
1/2 cup sugar
1/4 cup chopped chocolate chips
1 cup milk [I used almond milk]
1 cup Captain Bastard’s Oatmeal Stout (or any other dark beer)
1/4 cup oil
1 tsp. vanilla extract
-In a large mixing bowl, sift flour, cocoa powder, baking powder, salt, sugar and chocolate chips.
-Make a well in the center of the dry ingredients and add milk, beer, oil and vanilla. Mix together until combined.
-Cook waffles on waffle iron.
For Chocolate Sauce:
1 cup milk
1 cup chocolate chips
1 tsp. vanilla
-bring milk to a boil
-turn down to low heat and stir in chocolate chips until melted.
– add vanilla and remove from heat.
*you can serve the sauce as soon as it stops steaming.
They came out SO SO SO good.
